1.鸡脯肉洗净,用刀稍微片开一些,将肉尽可能的展开,然后用肉锤不断的轻轻拍打,直至它变成原来的两倍大,然后放入盘中,加入盐,酱油,料酒,胡椒粉,淀粉,白糖腌渍。4I^"YH

2.香菇洗净切丝,胡萝卜洗净去皮切丝,火腿切丝,并将香菇丝和胡萝卜丝分别过一下油。u-]+]@TW:nu{M

3.这时调一碗蛋白糊,取蛋清,淀粉,清水放入小碗内搅匀。再调一碗味汁:番茄酱,酱油,白糖,醋,盐搅匀。o&il*@%tF

4.将腌渍好的鸡脯肉平铺在案板上,包入火腿丝和过完油的香菇丝,胡萝卜丝,卷的时候一定要卷紧,最后裹上一层蛋白糊,放入煎锅中煎黄取出。

5.锅中倒入刚才调好的番茄味汁,烧开后投入炸过的肉卷,焖煮至汁液收干,取出切成小块。!`n/seJ:v

6.另起油锅,放入青菜炒一下,加盐调味后盛出垫于盘内,再将切好的肉卷铺在上面就可以了。青菜可以随意选择,豆苗,鸡毛菜都可以,但现在很难买到,用嫩嫩的小菠菜代替也不错。
