腌笃鲜的用料取鲜猪肉、鲜笋和腌制猪肉三样,佐以黄酒调味,加一点火腿吊味亦佳。炖制之前,腌肉浸泡脱咸,鲜肉取蹄肉,笋是从山上刚挖的鲜笋为上品,腌肉与鲜肉可以沙锅合炖,也可以分开炖汤再入一锅加笋猛火合炖,成品腌笃鲜的口感是“汤汁浓白厚醇,肉绵笋脆,滚烫香鲜”。
